Black Bean and Corn Salsa or Salad


Is it a salad or is it a salsa?  I'd say it's both.  It's great just eaten as a side, and it also makes a really tasty addition to a pulled pork taco.

Here's what worked for me:


1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic, minced
1 teaspoon salt
2 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups frozen corn kernels
2 tomatoes, chopped
chopped red onion
chopped fresh cilantro

Add right before serving:
1 avocado - diced

Whisk together the lime juice, olive oil, garlic and salt in a large mixing bowl.  Dump in the black beans, corn, tomatoes, red onion, and cilantro.  Mix well and refrigerate.  Right before serving, mix well and add in the chopped avocado.  

Note:  This is pretty tangy, so reduce the amount of lime juice if you want it a little less acidic.
