~Buffalo Shrimp and Spinach Salad~
If you love buffalo wings, you've got to try buffalo shrimp. Here's how I do mine:
Clean, devein, and butterfly the shrimp. I think the butterflying helps the shrimp to cook more evenly, and it also provides a little more surface area for the sauce to adhere. Place the shrimp in a bowl of evaporated milk. Season some flour with salt and pepper, and preheat a deep fryer to about 365.
Take a handful of shrimp, shake off the excess milk, dredge them in the seasoned flour, and deep fry them until they are golden brown. Drain on a paper towel. Be sure to fry small batches so that the shrimp cook quickly.
Toss the the fried shrimp in a mixture of butter and Frank's Red Hot, and get ready for a real treat.
